About Sake Bar IKKON

Woman in traditional attire holding a glass, sitting contemplatively.

Three elements. One unforgettable moment.

San Diego’s first sake bar, owned and curated by certified sake sommelier Ayaka Ito, is a true celebration of Japanese culture. Ito has crafted every experience around three harmonious elements - sake, food, and glassware. Change the glass, and the same sake, one of the finest alcoholic beverages, tastes different. Add the right dish from our Japanese restaurant menu, and something unexpected comes alive. Get all three right, and the result is an unforgettable experience we call tripling.

The culinary aspect of this magic is influenced by Marie Chiba, owner of EUREKA!, Tokyo’s legendary sake bar, and one of the few people worldwide to hold the title of Sake Samurai, one of the highest honors in sake culture. Her expertise shapes how we approach the pairing of food and sake, reflected in every dish we serve.

Sake Bar Gaga has designed a menu where sake, food, and glassware are thoughtfully selected with this magical experience in mind. Our goal is to share the richness of sake culture and connect people around the world through the enjoyment of sake.

The Experience

Sake Bar Ikkon is a Japanese tapas-style sake bar that San Diego has never seen before.

Our menu features 10 to 12 small plates that are designed to pair with the sake. Not as an afterthought. Not by tradition. But with scientific intention, understanding how umami compounds interact, how acidity shifts on the palate, how the shape of a glass changes what your nose perceives before you even take a sip.

Two ways to drink:

Sake Omakase — Order any dish and ask for its sake pairing. We've matched every plate to a sake that transforms alongside it. Trust us, and let the tripling happen.

Sake by the Glass — Prefer to explore on your own? Browse our curated selection and pour what calls to you.

There's no wrong way to experience GAGA — only your way.

Frequently Asked Questions

We don't. Ikkon is a sake bar, our small plates draw from Japanese flavors and beyond because sake is surprisingly versatile, and the most unexpected pairings often produce the most extraordinary results. Every dish is chosen for the depth and dimension of its flavors and what it unlocks in the sake beside it.

Not in the traditional sense. Ikkon is a Japanese tapas-style sake bar. You choose the dishes you want from our menu of 10 to 12 small plates. What we do offer is sake omakase: order any dish and ask us to choose the sake that pairs with it.

Not at all. Our sake omakase pairing means you can leave every drink decision to us — just order the food you want and we'll take care the rest.
